- 25 ml coconut oil
- 1 tbsp julienne ginger
- 1 tbsp sliced garlic
- 2 julienne green chillies
- 1 sliced red onion
- 6 curry leaves
- Salt to taste
- ½ tsp turmeric powder
- 1 tsp chilli powder
- ¼ tsp coriander powder
- 120 g squid, cut into rings
- ½ tsp roughly crushed black pepper
Here's how to make the Squid Pepper:
- Heat the coconut oil in a thick-bottomed pan over medium-high heat.
- Add the ginger, green chillies, garlic, sliced onions, and curry leaves, and fry until the onions start to brown.
- Add salt, turmeric powder, chilli powder, and coriander powder, and stir well.
- Add the squid and cook over high heat for a few seconds, stirring constantly.
- Finally, add the crushed black pepper, check the seasoning, and take it off the heat.
- It's important not to overcook the squid, as this will cause it to become tough and rubbery. Be sure to cook it for just a few seconds on high heat to ensure it stays tender and juicy.
